Common Surface Problems

  • White film (kahm yeast)
  • Cloudy brine
  • Floating vegetables above the brine line

Quick Fixes

  • Skim surface film promptly
  • Add a fermentation weight or clean plate
  • Top off with fresh brine
  • Wipe jar rims to remove residue

Prevention

  • Use airlocks or loose lids to limit oxygen
  • Pack vegetables tightly
  • Keep brine 1-2 inches above solids
  • Check daily during the first week
